Starting in the prestigious Culloden House Hotel at the age of 16, Ken has since worked in kitchens around the world.
After completing studies at the Athlone Institute Of Technology, Ireland, Ken moved to Australia, working up the Gold Coast and most notably catering for King Charles at the Geelong Grammar School.
Upon returning to Scotland, he progressed from Commis Chef up to Head Chef through experience in hotels and restaurants across the country, before opening a bistro on the Edinburgh Royal Mile. Finally moving home to Inverness in 2008, he joined his good friend Scott Murray in developing Cru Hospitality, now bosting ten of the Highland’s top venues.
In 2023, Ken acquired The Ghillies Kitchen, offering bespoke catering for weddings, corporate events and private parties throughout the Highlands.
Most recently, he established Brude’s Bistro at Kings Golf Club, Inverness with breakfast, classic bar food, Sunday carvery, kids options, seasonal ala carte dishes and event catering coming soon.
